Steps:
1. Preheat the oven to 200°C (400°F) and grease a baking dish with olive oil.
2. Slice the eggplant into 1/4-inch thick rounds and sprinkle with salt. Let sit for 10 minutes to release the bitterness. Rinse and pat dry.
3. In a pan, heat some olive oil over medium heat. Add the eggplant slices and cook until lightly browned on both sides. Remove from the pan and set aside.
4. Preheat oven to 180°C (350°F). Spread a thin layer of tomato sauce in the bottom of the baking dish. Add a layer of eggplant slices, a sprinkle of Parmesan cheese, and some mozzarella slices. Repeat the layering until all ingredients are used up, finishing with a layer of cheese on top.
