Eggplant Parmesan

A classic Italian dish made with layers of eggplant, tomato sauce, and cheese, baked to perfection.

Ingredients:

1 tsp
Salt
2 cup
Tomato sauce
1 cup
Mozzarella cheese
3 tbsp
Olive oil
1 cup
Parmesan cheese

Steps:

1. Preheat the oven to 200°C (400°F) and grease a baking dish with olive oil.
2. Slice the eggplant into 1/4-inch thick rounds and sprinkle with salt. Let sit for 10 minutes to release the bitterness. Rinse and pat dry.
3. In a pan, heat some olive oil over medium heat. Add the eggplant slices and cook until lightly browned on both sides. Remove from the pan and set aside.
4. Preheat oven to 180°C (350°F). Spread a thin layer of tomato sauce in the bottom of the baking dish. Add a layer of eggplant slices, a sprinkle of Parmesan cheese, and some mozzarella slices. Repeat the layering until all ingredients are used up, finishing with a layer of cheese on top.
5. Bake in the preheated oven for 30-40 minutes, or until the cheese is melted and bubbly. Let it rest for a few minutes before serving. Enjoy your Eggplant Parmesan!
