Mapo Tofu is a popular Chinese dish from the Sichuan province, featuring tofu and minced meat cooked in a spicy and flavorful sauce.

Ingredients:

3 cloves
Garlic
50 ml
Water
1 tsp
Sugar
250 ml
Chicken broth
1 tsp
Ginger
2 tbsp
Soy sauce
400 g
Tofu
4 pieces
Green onions
2 tbsp
Cornstarch
2 tbsp
Cornstarch
2 tbsp
Cornstarch
2 tbsp
Cornstarch

Steps:

1. In a wok, heat oil over medium heat. Add garlic, ginger, and the white parts of the green onions. Cook until fragrant.
2. Add the minced meat and cook until browned. Stir in the doubanjiang and fermented black beans.
3. Pour in the chicken broth and bring to a simmer. Gently slide in the tofu cubes and let them simmer for a few minutes.
4. Season with soy sauce, sugar, and Sichuan peppercorns. Mix the cornstarch with water to make a slurry and stir it into the sauce to thicken.
5. Sprinkle with the remaining green onion parts and serve hot with steamed rice.
