Fasolada is a traditional Greek bean soup made with tomatoes, olive oil, and vegetables. It is a hearty and nutritious dish perfect for a cozy meal.

Ingredients:

1 tsp
Salt
1 piece
Onion
2 cloves
Garlic
2 piece
Potatoes
2 piece
Carrots
800 ml
Vegetable broth
4 tbsp
Olive oil
1 tsp
Pepper
2 tbsp
Tomato paste
2 stalk
Celery
400 g
Diced tomatoes
250 g
White beans
2 piece
Bay leaves
1 tsp
Oregano

Steps:

1. Soak the white beans in water overnight, then rinse them. In a large pot, heat olive oil and sauté onions and garlic until translucent.
2. Add the chopped carrots, celery, and potatoes to the pot. Stir in the tomato paste, diced tomatoes, and vegetable broth. Season with salt, pepper, oregano, and bay leaves.
3. Simmer the soup on low heat for about 1-1.5 hours or until the beans and vegetables are tender. Remove the bay leaves before serving. Serve hot with a drizzle of olive oil on top.
