Cassoulet is a classic French dish made with white beans, various meats, and vegetables.
Steps:
1. Soak the white beans in water overnight. In a large pot, cover the beans with water and bring to a boil. Cook for 45 minutes, then drain and set aside.
2. In a separate pan, cook the bacon until crispy. Add chopped onion, carrot, and garlic, and cook until softened.
3. Add the cooked bacon mixture to the pot with the drained beans. Season with salt, pepper, thyme, and bay leaves. Add in the sliced sausages.
4. Cover the pot and place it in the oven. Bake for 2 hours at 350°F (180°C).
