Ossobuco is a classic Milanese dish made with braised veal shanks in a flavorful sauce.
Steps:
1. Season the veal shanks with salt and pepper, then dredge in flour.
2. In a large pan, heat olive oil and brown the veal shanks on all sides. Remove and set aside.
3. In the same pan, sauté onions, carrots, and celery until soft. Add garlic, tomato paste, and herbs.
4. Return the veal shanks to the pan, add white wine and chicken broth. Cover and simmer for 2 hours.
