Lamingtons are traditional Australian cakes made of squares of sponge cake coated in chocolate sauce and desiccated coconut.
Steps:
1. Preheat the oven to 180°C (350°F) and grease a square baking tin.
2. In a large bowl, cream together butter and sugar until light and fluffy. Add eggs one at a time, beating well after each addition.
3. Fold in the sifted flour and milk, alternating between the two, until a smooth batter forms.
4. Pour the batter into the prepared tin and bake for 25-30 minutes or until a skewer inserted into the center comes out clean.
5. Let the cake cool completely, then cut into squares.
6. Prepare the chocolate coating by melting chocolate and butter together in a heatproof bowl over simmering water.
7. Dip each square of cake in the chocolate mixture, then roll in desiccated coconut to coat evenly.
8. Place the coated lamingtons on a wire rack to set before serving.
