Lamingtons are traditional Australian cakes made of squares of sponge cake coated in chocolate sauce and desiccated coconut.

Ingredients:

4 piece
Eggs
200 g
Butter
200 g
Sugar
100 ml
Milk
200 g
Flour
200 g
Chocolate
150 g
Desiccated coconut

Steps:

1. Preheat your oven to 180°C (355°F) and grease a 20x20cm (8x8 inch) baking pan.
2. In a mixing bowl, cream together the butter and sugar until light and fluffy.
3. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
4. Sift in the flour and baking powder, then gently fold into the mixture until just combined.
5. Pour the batter into the prepared baking pan and bake for 25-30 minutes or until a skewer inserted comes out clean.
6. Allow the cake to cool completely in the pan, then cut into squares.
7. Prepare the chocolate icing by mixing the cocoa powder, boiling water, butter, and powdered sugar in a bowl until smooth.
8. Dip each cake square into the chocolate icing, making sure to coat all sides, then roll in desiccated coconut.
9. Allow the lamingtons to set before serving. Enjoy!
