Lamingtons are traditional Australian cakes made of squares of sponge cake coated in chocolate sauce and desiccated coconut.
Steps:
1. Preheat your oven to 180°C (355°F) and grease a 20x20cm (8x8 inch) baking pan.
2. In a mixing bowl, cream together the butter and sugar until light and fluffy.

7. Prepare the chocolate icing by mixing the cocoa powder, boiling water, butter, and powdered sugar in a bowl until smooth.
8. Dip each cake square into the chocolate icing, making sure to coat all sides, then roll in desiccated coconut.
