Caldo Verde is a traditional Portuguese soup made with kale, potatoes, and chorizo.
Steps:
1. Peel and dice the potatoes. Set aside.
2. Slice the chorizo. Set aside.
3. In a large pot, sauté the onions and garlic in olive oil until translucent.
4. Add the diced potatoes and chicken broth to the pot. Bring to a boil and cook until the potatoes are tender.
5. Stir in the thinly sliced kale and simmer for a few more minutes.
6. Season with salt and pepper, and add the sliced chorizo. Cook for another 5 minutes.
