Pasta alla Norma is a classic Sicilian pasta dish made with eggplant, tomatoes, basil, and ricotta salata cheese.
Steps:
1. Cook the pasta in a large pot of salted boiling water until al dente, then drain and set aside.
2. In a large pan, heat olive oil and fry the eggplant until golden brown. Remove from pan and set aside.
3. In the same pan, add garlic, chopped tomatoes, and basil. Cook until the tomatoes start to break down.
4. Add the cooked pasta and fried eggplant back to the pan, toss to combine. Serve with grated ricotta salata cheese.
