Steps:
1. Preheat the oven to 180°C (350°F).
2. Slice the eggplant and lightly salt them, then set aside for about 30 minutes to remove bitterness. Rinse and pat dry.
3. In a pan, brown the minced meat and onions. Add garlic, tomatoes, tomato paste, and season with salt, pepper, and herbs. Let it simmer for 15-20 minutes.
4. Grease a baking dish and layer the eggplant slices on the bottom. Add the meat mixture on top. Repeat the layers and finish with a layer of eggplant.
5. Prepare the béchamel sauce by melting butter, adding flour, stirring in milk until smooth and thick. Season with nutmeg, salt, and pepper.
6. Pour the béchamel sauce over the top layer of eggplant. Sprinkle with cheese and bake in the preheated oven for 45-50 minutes or until golden brown.
