Crêpes Suzette is a classic French dessert of thin pancakes served with a sauce made of caramelized sugar, butter, orange juice, and liqueur.

Ingredients:

4 piece
Eggs
1 g
Salt
1 g
Butter
1 g
Sugar
1 ml
Milk
1 g
All-purpose flour
1 ml
Orange juice
2 g
Orange zest

Steps:

1. Prepare the crêpe batter by mixing flour, eggs, milk, and a pinch of salt in a bowl. Let it rest for 30 minutes.
2. Cook the crêpes in a hot pan until golden brown on both sides. Fold them into quarters and set aside.
3. In a pan, melt butter and sugar together, add orange juice and orange zest. Let it simmer until the sauce thickens slightly.
4. Add a splash of orange liqueur and place the folded crêpes in the pan. Let them soak in the sauce for a minute, then flambe the dish using a match.
5. Serve the Crêpes Suzette hot, spooning some of the sauce over each serving. Garnish with orange zest and enjoy!
